Keto Chunky Monkey Ice Cream



I scream, you scream.. We all scream for ICE CREAM! This is my second time using my ice cream maker I got for my birthday last August. First go around I made pumpkin cheesecake ice cream and it was fantastic! This time I wanted to try making one of our favorite Ben & Jerry flavors. Chunky Monkey! Let me tell you, this came out so delicious and for a ketofied version it was pretty spot on. But of course I need everyone to make it too and let me know what you think.


🍦Keto Chunky Monkey ice cream 🍦

Ingredients-
1 cup heaving whipping cream
1/2 cup unsweetened cashew milk (any nut milk would work)
1tsp vanilla
1T Choczero banana syrup OR 1-2tsp banana extract
2 egg yolks
1T sweetener of choice (add more to your liking if you’re using extract)
2tsp beef gelatin
1T peanut butter of choice
2 Choczero peanut bark or chocolate of choice

*Overnight place your ice cream mixer bowl in the freezer.
In a bowl mix together everything except beef gelatin, PB, & chocolate. Once ingredients are mixed add to a sauce pan low heat. Stir constantly till it starts to simmer. Add your beef gelatin and continue to stir. The gelatin will thicken the liquid mixture. Once you can see that happening take off the fire and let cool completely.
Once cooled add to your frozen ice cream bowl and begin to mix it. When it’s close to being done add your peanut butter to get swirls mixed it. Transfer to a freezer safe dish and mix in your chocolate. You can either eat it now or wait a little to firm up a bit.

11 servings (cookie scoop size) (I may have eaten one & that's why the picture shows 10)
Calories- 120
Fat- 10.8 grams
Protein- 3.1 grams
Net Carbs- 1.6 grams


*Please note if you don’t have an ice cream maker you can just freeze it all together but mixing it every 30 minutes till it’s the consistency you like.

 In honor of Cinco De Mayo tomorrow, I wanted to recreate one of our favorite Mexican cookies! Raspberry Lemon Ricotta Muffins

Happy Monday! It's a beautiful rainy day here in SoCal! When it's raining I LOVE baking. A couple weeks back I bought some freeze dried raspberries because I knew I wanted to make something yummy in the form of muffins. Well today was FINALLY that day. I've been on a major lemony kick and I've definitely been overplaying it. But come on who doesn't miss those yummy Starbucks lemon loaf slices? I know I've said this before but those are my favorite. So with this recipe I basically took my "Lemony Ricotta Mug Cake" and tripled it and formed into these delish muffins. They are super moist and full of flavor. Sweet just how I like it!
