Creamy Broccoli Soup

Happy May! It's been a minute since I have posted anything. Life got a little blurred over the last two months. So much was going on that I put this on the back burner, till now! I'm bringing you something super special. Something I have been craving for a very long time. Well, Yesterday I wasn't feeling good and I wanted soup. So I came up with this deliciousness and I am so excited to share it with everyone. A week or so ago I received this chicken bone broth powder from Vital Proteins and I knew that I would be making lots of different soups. This bone broth did NOT disappoint. Dare I even say that I'm feeling a little better today after consuming this soup? All the magical benefits of bone broth healed me overnight!

🥦 Creamy Broccoli Soup 🥦 

32 ounces water (or you can just use 32 ounces chicken broth/stock, then omit next ingredient)
4 scoops Vital Proteins Chicken Bone Broth (
2 cups heavy whipping cream
2 cups shredded sharp cheddar cheese
4 ounces cream cheese
1-2 bags frozen broccoli (microwaved)
1T Trader Joe’s Umami seasoning
Salt & cracked pepper to taste

Pour water into a soup pot, scoop in your chicken bone broth and bring to a boil. Once it’s boiling add in your heavy whipping cream, cheese, cream cheese. Wait till it’s well combined and the cheeses are melted down. Add in your broccoli + seasonings. Taste test and adjust to your liking. Broccoli will start to break down but if you want to speed it up use an immersion blender. Let it simmer on medium low heat for 30 minutes. Once off the heat it’ll thicken up quite a bit.
Garnish with more cheese or like I did grilled cheese crisps.

(Unicorn) Marranitos - Mexican Pig Cookies

 In honor of Cinco De Mayo tomorrow, I wanted to recreate one of our favorite Mexican cookies! Before Keto we would buy these from our local grocery store along with the tri-color delicious sugar cookies too! Well, now we wont ever be tempted because in my opinion these are SPOT ON! Air Fryer Pizza Meatloaf w/ Bacon Gouda Mac

I am OBSESSED with my GoWise Air Fryer! I've done it again! Tonight I made Pizza Meatloaf in it, MY OH MY. It was 100% Husband approved AND picky 9 year old son approved!! What!! I feel like I'm in the Twilight Zone, this is crazy! My sons first time trying meatloaf and I am over the moon siked he liked it. He's finally branching out with different foods #momwin He can't even stop saying how delicious it was! How I came up with this idea?
